1 small onion
3 c grated zucchini
1 c wholemeal flour
tsp or a pinch of chilli powder
1 tsp fresh or dried herbs (tarragon and oregano are particularly good)
salt and ground pepper, to taste
c Cyclops Reduced Fat yoghurt
1 egg
oil for frying

Chutney for garnish
Saute onion in a little oil. Combine onion, zucchini, flour, chilli powder, herbs, salt and pepper in a bowl. Whisk egg. Add egg and Cyclops yoghurt to other ingredients. Mix. Fry spoonfuls until golden brown on both sides.
To serve allow to cool slightly and spread with sour cream then top with a dollop of chutney. Makes approximately 20 fritters.
Variation: Rather than creating a base with the rice and egg mix these ingredients in with the vegetable and herb mixture.
